About our exciting program speakers…
We are thrilled to welcome Dr. Jeffrey Savell and Mr. Ray Riley, two of the famous pit-masters or “Aggie Brisketeers” from Texas A&M Barbecue Class.

You may have heard of the famous BBQ Class offered by the College of Agriculture. Aggie Freshman aspire to be in this class when they get to West Campus, but it’s a tough ticket to get. For those that make it, the Friday afternoon class offers a wealth of knowledge about brisket and “all things barbecue and meat,” and also a lot of lessons about life, mentorship, and belonging among like-minded students and mentors for life. These two amazing men will talk about this sought after class at TAMU and much more.
They also coordinate and teach enormously popular programs as “Camp Brisket” and “Barbecue Summer Camp” which folks come from all over to attend and also are on waiting lists to be a part of something special and world-renowned.
Dr. Savell has been a part of Texas A&M for more than 50 years – as an undergraduate student, graduate student, Texas A&M AgriLife Extension Service Specialist, and faculty member focusing on areas of teaching and research in animal and meat sciences. He now serves as the Vice Chancellor and Dean for the College of Agriculture and Life Sciences, all the while still teaching and mentoring the students.
Mr. Riley had a 50 year connection with TAMU and the Department of Animal Science. He arrived in Aggieland in 1975 as an Animal Science student, and was a member of the TAMU Meat Judging Team. By 1979 he became a student worker in the department. Only a short time after graduating, at age 24, he was named manager of the brand-new Rosenthal Meat Science and Technology Center and earned his master’s degree. He not only helped manage, but build the Rosenthal Center. He taught Animal Science 307 labs and created courses for TAMU and AgriLife Extension.
Alongside Dr. Savell and Davey Griffen, Ray Riley became one of “The Three Brisketeers”. After 46 years of service to the department, including many brisket camps, famed beef jerky creations, and years of managing and leading at the Rosenthal Center, Mr. Riley retired.
